Andrew Sargent from 501 On Main in Park City was here and made Gazpacho.
RECIPE: Gazpacho
1 clove garlic minced
½ tsp toasted cumin
1 qt Tomatoes, ½" dice
2 cups Cucumber, peeled & ½" dice
½ cup Red bell pepper, ½" dice
2 jalapeño, seeded and diced
¼ cup red onion
Olive oil, as needed
1½ Tbsp. sherry vinegar
Salt (to taste)
Cilantro oil (for garnish)
1. Combine tomato, garlic, cumin, and cumber and let sit for 15 minutes. After 15 minutes blend ingredients together in food processor or blender until smooth.
2. Add vinegar and adjust seasoning as desired. Use water to adjust thickness if desired as well.
3. Chill for 1 hour and serve.
4. Garnish with cilantro oil.
