Fire Roasted Tomato Soup
Ingredients
1 onion chopped
1 tablespoon butter
1 teaspoon sugar
2 cloves garlic minced
.25 teaspoon red pepper
1 can Chicken broth about 14 ounces
2 tablespoons basil fresh is best
.5 cup whipping cream
2 cans Fire roasted tomatoes
Instructions
Chop onion. Melt butter. Add onion, garlic, basil, red pepper flakes, broth, tomatoes, and sugar. Bring to a boil. Allow to simmer at least 30 minutes. Divide soup in half and blend each half in an osterizer. (Allow soup to cool slightly before blending, and make sure to hold the lid on tight). Return soup to pot. Add whipping cream and stir. Serve with sour cream.
