Eclair Pie

Ingredients:
1 large box Vanilla Instant Pudding
1 small box Chocolate Pudding
Milk
1 Large container Cool Whip
1 package of Graham Crackers

Instructions:
Layer Graham Cracker
Layer Vanilla Pudding
Layer Cool Whip
Layer Graham Cracker
Layer Chocolate Pudding

Remember to whisk puddings and layer when not fully set up so it can be poured on Cool Whip.  Also, Cool Whip needs to be thawed.

I've got a similar recipe, and we love it! I mix the box of vanilla pudding (after it's mixed with three cups of milk) with the Cool Whip. I use the hand mixer to blend thoroughly. Instead of chocolate pudding for the topping, I use Pillsbury Chocolate Fudge frosting in a tub; remove the lid and aluminum protection, microwave NO MORE than 20 seconds. Mix well, then carefully pour over the last layer of graham crackers. Saran Wrap tight, store in refrigerator at least 12 hours before serving. An excellent blend of flavors, and impressive!
