Coppa Ravioli

Recipe: Coppa Ravioli

Ingredients:

  • 20 Paper Thin Slices Coppa Ham
  • 1 Cup Ricotta Impastata
  • 1 Tablespoon Fine Diced Preserved Lemon*
  • 1 Garlic Clove Fine Diced with Kosher Salt
  • 1 Tablespoon Chopped Parsley
  • 1 Tablespoon Chiffonade Basil
  • Salt and Pepper to taste
Directions:

In a bowl, combine ricotta, preserved lemon, garlic and herbs. Lay out thin slices of Coppa in the order it was sliced. Place approximately 1 teaspoon of ricotta mixture onto the center of every other piece of Coppa. Take the empty piece and match it up and press down to form a ravioli. Serve Chilled.


*You can substitute lemon zest if preserved lemon is not available.
