Cilantro Lime Chicken
6 Boneless Skinless Chicken Breasts
2 Large Avocados, diced
2 Roma tomatoes, diced
1 small Red Onion, diced
2 Bunches Cilantro, chopped
1 Large Lime
1 tsp. Minced Chopped Garlic
Salt & Pepper to taste
1 Ziploc Bag

Place the chicken,1 bunch of the chopped cilantro, 1/2 of the Diced Red Onion, Garlic, squeeze 1/2 lime and salt and pepper into the Ziploc bag. Place in the refrigerator for at least 1 hr or up to 8 hr. Once they have marinated, remove them from the bag and BBQ them or Broil them in the oven.
Avocado Salsa:
In a bowl, add the diced avocado, diced tomatoes, 1/2 of the diced red onions, 1 bunch of diced cilantro, squeeze 1/2 the lime and salt and pepper. Mix gently and place on top of the cooked chicken breast.
Goes great with rice and salad.
