Chipotle Roasted Chicken Thighs

Chipotle Roasted Chicken Thighs(GTU)

10 Thighs boneless, skinless
1 Tbsp. Chipotle powder
½ Tbsp. garlic powder
1 cup olive oil
½ cup Sherry
Salt and pepper to taste

Put everything in a bowl and make sure the chicken thighs are evenly coated with the marinade.
Cover and let it marinade at least 30 minutes but overnight is best

Place on a sheet pan that has been sprayed with pan coating and then out in a 350° oven for about 30 m- 35 minutes.

I like to serve this with cilantro lime rice and tortillas. Have some salsa and guacamole to be used as a condiment for the chicken.
