Alan from Cancun Café was here and shared a recipe for fresh Carnitas.

Carnitas

ingredients:
3 Lbs. pork butt
1 qt. vegetable oil
1 Tbsp. salt
¾ cup cola
¾ cup orange juice
1 onion, diced
1 bunch cilantro, chopped
salsa
corn tortillas

Place pork, oil, and salt in slow cooker. Cook on medium heat for 3 hours, or until pork is tender. Add orange juice and cola, and cook for 20 minutes more. Drain liquid and discard. Chop the cooked pork. Heat tortillas, top with pork, onion, cilantro, and salsa.
