:Beef and Snow Peas 
This is one of our favorite healthy recipes. But just because it's healthy doesn't mean it lacks flavor-in fact, just the opposite is true!
1/3 C. reduced sodium soy sauce
1/3 C. chicken broth
2 cloves garlic, minced
1 lb. boneless beef sirloin steak
1 tsp. cornstarch
2 C. fresh snow peas
4 tsp. canola oil, divided
In a small bowl, combine soy sauce, broth, and garlic. Set aside 1/4 cup. Place beef in a plastic zip-top bag; add remaining soy sauce mixture, seal, and squeeze the bag to mix the beef in the marinade. Refrigerate at least 1 hour.
In a small bowl, stir cornstarch and reserved soy sauce mixture until smooth; set aside. In a nonstick skillet, stir-fry snow peas in 2 tsp. hot oil for 3-4 minutes or until snow peas are crisp tender and bright green. Remove and keep warm. Drain and discard marinade from beef. In same skillet, stir-fry beef in remaining oil for 2 minutes.
Stir cornstarch mixture; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. Combine with snow peas. Serve with rice (brown rice makes this dish even more healthy!).
