BBQ Chicken Salad

Barbecue Chicken Salad
 
2 boneless, skinless chicken breasts
1 head red leaf lettuce
1 head green leaf lettuce
1 bunch cilantro
2 ears corn
1 can black beans, drained
1 medium avocado, chopped
2 tomatoes, sliced
1 cup BBQ sauce
½ cup Ranch dressing
 
Spread 1/2 cup BBQ sauce onto chicken breasts and grill over high heat about 6 minutes per side, or until chicken is cooked through.  Let cool and slice.  Rinse and tear lettuce heads and combine together.  Add the cilantro, corn, beans, avocado and tomato to lettuce and mix well.  Top with chicken strips.  Combine remaining 1/2 cup BBQ sauce with the ranch dressing and toss with salad or serve on the side.
