Asian Marinated Pork Tenderloin

Chef Dan Menlove from Dalton's Fine Dining in Payson shares his recipe for Asian Marinated Pork Tenderloin.

Ingredients:
  • 8 cups water
  • 2/3 cup kosher salt
  • 2 tbsp soy sauce
  • 3 tbsp lightly toasted black peppercorns
  • 2 inches fresh ginger sliced
  • 4 whole star anise
  • 4 bay leaves
  • 8 pork tenderloins
Directions:

Combine all ingredients in a deep bowl, except for pork. Stir to dissolve salt. Add pork, cover and refrigerate overnight.

Drain brine and pat pork dry. Add small amount of oil to a hot sauté pan. Saute tenderloins on all sides then place in 350 oven to cook through, about 5-8 minutes. Cook to internal temperature of at least 145. Remove from oven and allow to rest 3-4 minutes before slicing.
