Almond Croissants

Almond Croissants by Chef Charlie Perry, owner of Eva.

(makes one dozen)

Ingredients:
  • 1 (8 oz.) can almond paste
  • ½ cup powdered sugar
  • 6 oz. sliced almonds
  • 2 sticks softened butter
  • 1 tsp. vanilla or almond extract
Directions:
Preheat oven to 375 degrees. Slice the croissants in half. In a food processor, blend 2 oz. of almonds, powdered sugar, vanilla and almond paste. Blend until combined, then add butter and blend again until smooth. Spread the almond paste evenly on the bottom half of the croissant then put the top back on. Spread more of the almond paste on the top and place sliced almonds on a plate. Dip the top of the croissants in the almonds. Bake 15-20 minutes until golden brown.
