WOODS CROSS, Utah (ABC4 News) - She did it!  A Woods Cross woman vowed to cook in her crock pot every single day for a year, and today she is finishing her goal.

We first interviewed Karen Petersen on day one hundred, back in May, now we check in with her two hundred and sixty five dishes later.  In her long quest to slow down dinner,  mom of two Karen Peterson is pushing toward the finish line.

"At this point you are at mile twenty four of the twenty six point two marathon,  and you are almost there, so right now I'm very excited," she says.

It's been quite a year.  Petersen has been featured in newspapers, put together a crockpot cookbook and has learned the dos and don'ts of the slow cooker.  Not every recipe tasted good...

"We tried everything.  We didn't necessarily finish everything.  Some things just went down the garbage disposal for sure," she says.

Her family seemed to fare well.  Four year old daughter Reagan now draws pictures of mom holding crockpots and her husband, though craving pizza, has stayed supportive.

"The other day my buddy said, are you ever going to be able to eat a steak?  And I said, yeah, we've thrown it in the crockpot, all different kinds of steak.  So it's been good," Greg Petersen says.

It's been good, but has it been good enough to do it all again?

"That's like asking a woman who just had a baby if she's going to have another one, no!  You just don't do it.  Wait a few years to ask her again," Petersen says.

Until then, the crockpot will be taking a back seat.  Karen Petersen says come Tuesday, she wants pizza!

Petersen shared with us her top crockpot do: Be careful not to overcook the food.  Her top don't?  No fish or prime rib, it's too soggy.  If you want to see all of Petersen's recipes you can check out her blog at www.365daysofcrockpot.blogspot.com
